Picard (no contest)
Spock (among the ones that stay in that position for most of the show)
Odo (I like all those non-human obsever type characters like Spock, Data, Odo and such.)
Bashir (Favorite DS9 character)
Trip (I know, nobody but me likes Enterprise, but he was my favorite from that season. Scotty and Geordi are close, though.)
Paris (Hoped to get away without any VOY, but he is clearly the most memorable; Sulu always seemed to be a fairly minor character for a member of the core bridge team to me, but I am not that much of a TOS guy.)
Dukat (was there any other real villain?)

Also, what about stuff like Science, Operations, Tactical and such? This crew definitely needs more Data.

It's hard to use science or tactical because not all incarnations of ST had these positions.

Spock was both the Science and 1st Officer.

Kirk's crew had a communications officer etc.

Not all crews had tactical. I tried to pick positions that most if not all the crews had.

First Officer - Riker. A Kirk in the making.
Security - Tuvok. Actually a bit of a psychopath
Doctor - McCoy. I don't think he was ever sober.
Chief Engineer - Scotty. There can be only one.
Helmsman - Anyone but Wesley.
Villain  - Jack the Ripper, AKA Beratis, AKA Kesla, AKA Hengist, AKA the Enterprise's computer, AKA Jaris, AKA Hengist (again)

Best Captain - Janeway (she's mental and push her too hard and she'll blow up the ship)
First Officer - Riker (yum!)
Security - Worf (Klingon's are cool)
Doctor - Bones from the latest film (Karl Urban ... yum! yum!)
Chief Engineer - B'elanna Tores (she might get it together with Worf, although Scotty from the latest film played by Simon Pegg would be fun)
Helmsman - Yeah whatever
Villain - Borg

He's a wimp that can get beaten by almost anyone in the Star Trek universe.

Best Captain: Picard. I love Kirk. But Picard is what Kirk could have been if he had learned from his youth. I mean, Picard got stabbed by a Nausicaan through his heart (and laughed when it happened) he was so cocky. After that, he humbled himself and became the Picard we know today.

First Officer: Spock. Again, I love Riker, but Spock outwits him 9/10 times I'm sure.

Security: I wanted to go with Warf but unfortunately Warf is too emotionally charged. Odo, despite the fact that he becomes a useless bucket of water every so often, is much more versatile.

Doctor: State the nature of your emergency! The Doctor, Voyager.

Chief Engineer: While LaForge was a genius.. Montgomery Scott had to do much more with much less more often.

Helmsman: Hated his Holodeck programs, but the man could pilot the hell out of a ship. Tom Paris

Villain - Q! IS there any other villain? (Ok, maybe Moriarty). Surprised nobody has said.. KHAAAAAAAAN!

Best Captain: Jean-Luc Picard. Although I have one thing in agreement with Capt. Janeway: we're both hate Temporal Mechanics.
First Officer: William T. Riker. Undoubtedly the one you need to back you up in the direst times. Spock is OK but you have to (literally) think twice with Vulcans.
Security: Worf, definitely.
Doctor: Leonard McCoy and Emergency Medical Hologram ('The Doctor').
Chief Engineer: Geordi LaForge. I imagine an ideal engineer is a young man, while I pay high regard to Montgomery Scott.
Helmsman: Tom Paris. You need a real pilot who can fly not only a starship, but a piston-powered biplane as well.
Villain : Resistance is futile (should I say the name?)

Villain - The female shapeshifter from DS9 who represented The Dominion.  She was never given a name, but boy was she cold blooded.

I love Enterprise - It's actually my favourite

And I also noted that ops was missing though security and tactical are pretty much the same. Worf and Malcolm each covered both
